Can I use a gluten free flour for this recipe?

Hey Joanne--the shorter answer is that I'm not sure! I've made it with 10% oat or rye flours (the latter of which I know isn't GF) with success. But I've also tried it with 50% of each of those two flours and didn't get great results. What I haven't yet tried is more of like a 1:1 GF flour, like Bob's Red Mill. Maybe that would work better?? Not sure. Please let me know if you try something like that!

Right?! Same! I want to find lots more across lots of cultures. Would be cool to have a global collection of accidentally plant-based/vegan bakes.
