Totes, ish! Plus a flax egg and (if I remember right) a higher liquid ratio than my family’s wacky cake recipe. I actually initially tried this with my go-to wacky cake recipe but the effect was too dry for some reason, so I pulled from some other vegan chocolate cake recipes (hence the flax egg idea) and did some futzing with amounts. But yeah I kinda want to go back and try this again in wacky cake version—maybe that dryness was just a fluke of my oven 😑🤓
I love wacky cake. I have a version that I make often, and it is as rich and moist as any eggy, buttery chocolate cake. And so fast! It takes less time to mix than the oven preheat.
I’ve been working on a sourdough discard version (replacing the vinegar) that isn’t quite there yet, but is promising.
This seems delish! Is there a way to make it gluten free, aside from subbing 1:1 gf flour? Would be interested in exploring the nuttiness of almond flour or coconut in this concoction :)
Ooh that's such a good question. I haven't tried it but I'm sure it could be done. The gluten def plays a helpful structural role in the crumb (and is even more important structurally in the absence of eggs), so I'd be inclined to start with a 1:1 like Bob's Red Mill's and go from there perhaps?? But yeah nutty flavors sound good with this! Gotta add this to my testing list!
